We use a similar setup at work.  A FreeBsd box with sendmail and an NT box
with M$ Exchange.  The FreeBsd box has a set of aliases for incoming mail.
If there is no match there, incoming mail goes to the Exchange server.  I
haven't worked out quite how that happens though there's no SMART_HOST
entry for the Exchange server on the sendmail box.  The sysadmin is going
to look into it later in the week so I may be able to tell you more.  

I'd imagine that setting up a set of aliases on your sendmail box and
setting the Exchange server as a SMART_HOST should do the trick nicely.
The sendmail box will deal with anything it has an alias for and will
forward anything else to the Exchange box.
