Success,

Don't ask me how or why. I set up httpd to run under Init 5. I set the
path again and set up a nice wee index page. rebooted the machine.
Disabled iptables for the moment as well.

Hey presto Bobs your aunties husband. Web server working as God intended.

20 Minutes later, I have the organisations Intranet moved from a shitty Win
98 machine running PWS to my nice shiny new RH8 server (Well the OS is shiny
and new, box it runs on Ain't)

Try manually editing httpd.conf and change the line:
DocumentRoot "/var/www/html"
to
DocumentRoot "/home/sites/www"

Then save and RESTART THE HTTPD DAEMON
ie. > /etc/init.d/httpd restart
