You can do this using KMail's "filters", which, the more I use them,
the more powerful they seem.  You can filter on outgoing as well as
incoming emails, and among the possible actions are "Select Identity",
"Insert Header", "Rewrite Header", etc.  Filtering can be done on many
criteria, including "<Header> matches <regexp>", which should suit you
fine.

Look in "Configure filters" in the Settings menu.
