potato is a lot behind the bleeding edge, woody is a sane
distance away, sid _is_ the bleeding edge. That's how debian
works :o) You have open access to all three, you make you're
choice, Debian have (senibly) chosen to only label the
stable branch as well .. stable. Both woody and sid are actually
more stable than some releases other distros have made.

the whole point is to stick sensibly away from the bleeding
edge, it's a good idea and makes for _very_ stable production
systems, if you feel like bleeding edge it's an apt-get dist-upgrade
away and debian makes it incredibly easy to use non-standard 
packages.

Stabibility is never sacrificed, it looks likely woody wont have
the 2.4 kernel for example, but ship with 2.2. And it's no biggie,
if you want ot use 2.4 it's there for you.
