There are two places to obscure someone's email - at entry to the list,
and at archival time. The latter obviously doesn't protect against a spammer
subscribing to the list to harvest addresses. The former, unfortunately,
prevents you from taking a discussion offline when it gets suitably OT -
although some might see this as a benefit rather than a problem. And, of
course, there is the long-ignored requirement^Wrequest^Wplea in RFC822
(or maybe 821, or 850, or some other long-forgotten document) that you
simply do not mess with a mail message's significant headers. Or content,
come to that.

It's perhaps a naive view, but I think you're better off spending your
energy on root cause: the spammers themselves, and the enablers thereof.
Lobby your local politician for anti-spam legislation. Hassle people who
leave relays open. That sort of thing. Me, I tend to filter stuff that I
can filter, and complain to relays and ISPs about stuff that gets past
the filter.
