Why not chuck it behind the firewall as well, and only allow smtp
connections?

Gosh, have no idea about a simple central doc, but try looking at some
of the documents on eg

	http://www.postfix.org/

Even if you don't want postfix, it has some useful info.  Also
definitely have a look at

	http://www.tldp.org/HOWTO/Mail-Administrator-HOWTO.html
	
They should both show you how to set up things from scratch.

Have you any experience setting up Linux full stop, or is it just
the mail server you've haven't set up?
