Thats exactly what it does. It's meant for the odd spam that gets past
my filters, not a large mailbox full of them.

+spam or +ham. I've changed that to 'appropriate folders'.

The taggging solution given by Brendan is probably the easiest way to do
this.
Alternativley you could pipe all the messages through spamassassin and
sort the mail using X-Spam-Status to get rid of a lot of them.
This is left as an exercise for the reader.
Hint: formail -s procmail <procmailrc>
