I've worked on two ICT e-Xpos (the one Valen mentioned was the one
before that I think).

During the first one I worked on, there was a lot of "what is linux?"
kinda questions.

During the second one, we had a nice big stand (courtesy of ILUG/IBM
loves linux) with lots of machines. People seemed to have a better idea
of what linux was, and what it could do for them. They all seemed very
impressed by a quick redhat install, or a knoppix boot. I don't know
that demoes are all that useful, because what you have is a mobile group
of people wandering around. Unless you setup some kind of seating area
or something.
