I did an undergrad in CS (Mathematical and Computing Science, UCG) so I 
can't speak to the usefulness or otherwise of post-grad courses. 
However, both of the colleges I attended (and, unfortunately, still 
attend... motivation is a sneaky and slippery devil making it tough to 
find) have postgrad courses:

Department of Computer Science, UCD:
 - Higher Diploma in Computer Science

 - H.Dip/M.Sc Computational Science
   (http://dumas.ucd.ie/msc/MScCompSci.html)

My Ph.D. supervisor runs this course and I'd be happy to put you in 
contact with him. I know a couple of people who did the H.Dip. is CS 
and I can put you in contact with them if you'd like.

As for UCG (or NUI, Galway as it is now known):

 - MSc - Communications Systems Theory (Dept. of Maths - 
interdisiplinary)
