Ah, a distro war, been a long time :)

It comes to something quite simple. How valuable is your time in terms
of installation/compilation. Gentoo is very neat, always uses the
latest software out there and allows you to tune a lot of things.
Downside is the time it will take you to compile stuff. You have a
pretty decent config so it shouldn't be a problem.

Debian on the other hand is package-based and quite easy to get along
with, it is not as sharp on security (if you are using sarge) compared
to Gentoo. Sid (Debian unstable) on the other hand is okay, your
choice.
