If you are using a recent version of knoppix (since mid May 2004), you 
can use the cheatcode lang=ie when you boot to get what should be a sane 
setup for Ireland ("knoppix lang=ie" at the boot prompt, SHIFT+0 is = 
under the german keyboard).

If you have installed to hard disk it depends which type of install you 
have done.  If it is an auto-detecting install (beginner or old style I 
think) you should be able to edit the lilo config to append the lang=ie 
boot option (don't forget to run lilo afterwards) or you could always 
set the default language to ie in /etc/init.d/knoppix-autoconfig by 
editing the following section:

### localization
# Allow language specification via commandline. The default language
# will be overridden via "lang=de" boot commandline
LANGUAGE="$(getbootparam lang 2>/dev/null)"
[ -n "$LANGUAGE" ] || LANGUAGE="de"

So the last line reads
[ -n "$LANGUAGE" ] || LANGUAGE="ie"

If you did a debian type install you probably want to edit these files 
to have the following values

/etc/sysconfig/i18n

COUNTRY="ie"
LANG="en_IE at euro"
CHARSET="iso8859-15"

/etc/sysconfig/keyboard

KEYTABLE="uk"
XKEYBOARD="uk"
KDEKEYBOARD="gb"
#Additional KDE Keyboards
KDEKEYBOARDS="us,de,es,fr,it"

And then (as root) do
rm -f /etc/localtime
cp "/usr/share/zoneinfo/$TZ" /etc/localtime

And I think (post next boot) everything should be as if you had used 
lang=ie from the outset :-)
