Depends on the imap/pop3 server you wish to use ...

could use courier-imap (which provides pop also & their secure variants).
case of 'yum install courier-imap'
fairly easy setup - /usr/lib/courier-imap/
files there (configs/binaries etc)

alternatively, I believe there is another pop3 daemon (pop3d), which 
again : yum install pop3d
I have no experience with it however.
