Unless of course the exam specifically states that you're to install X, as it did with mine :P
I used this book and found it excellent:

You need to have a lot of Redhat specific knowledge - i.e. know their tools and configurations inside out.
Know how to fix a broken system - you must get 100% in your troubleshooting section.
FYI, the next exam is the 8th of April. I just did the RHCT exam before so hopefully I'll be on this one to
finish the RHCE.

All I can say is:
Do not install X or any gui-fied apps or you will simply run out of time
during the practicals. Time is an issue.
