gnokii works pretty well with bluetooth, in my experience.
It now works with most phones, I think, not just Nokia.
(It can work in AT mode, which I think covers virtually all new phones.)
It is very actively developed,
and the developers are extremely helpful -
queries on the gnokii mailing list are usually answered
within one or two days.
There are a number of associated programs - by different authors -
which don't work as well in my experience,
eg xgnokii and gnokiifs - which is supposed to mount your phone
as a coda filesystem, but which seems to do nothing with my Nokia 6310,
though that may well be due to an error on my part.
