I was playing with Beatrix, which is designed for just such a purpose.
It got good reviews on osnews and slashdot. Its a minimal ubuntu based
distro which comes as a live CD, but can be installed onto a hard
disk. Its got gaim, firefox, openoffice and evolution, and runs gnome
folded into the kernel so its very fast. It doesnt come with anything
linux though, so no vim/emacs for example, but its come with apt (is
debian based) so tis easy enough to add anything.

http://www.watsky.net for download.
