What about a Slug?  You can blow away the stock firmware and install 
Debian.  Has 266MHz XScale (ARM-like) processor 32MB RAM, 2 USB ports and 
an Ethernet port (10/100) and only consumed a few watts.  Has a small 
(may ~1GB ish) internal flash, but you can use a flash key or a USB drive 
enclosure.  Its cheap too - only 95euros.

Some of the open source firmwares (e.g. Unslug, SlugOS) are tailored to 
running from USB Flash drive (i.e. /var/run, /var/log in RAM, noatime, no 
swap or swap on a different drive, etc.)
