Why are you looking for a distribution? Can't you make an audio server
out of any distribution? If you want something without X11, you can
use Ubuntu server edition. Basically, pick a distribution you like,
install appropriate packages, configure, enjoy.

What is your goal? Sharing a pair of speakers among multiple computers
at home? Sharing a music player? Sharing files?
