Paul,
It might be worth looking into Qt, they're moving towards including S60
support in the next release (Qt 4.6).
There's a few blog posts here about it.

Also they have been working on support for the Maemo platform as well.

I've certainly found the Qt toolkit to be very handy when it comes down to
development with C/C++ it can take a lot of the pain away but gives you an
API akin to Java in it's inclusiveness. QtCreator is also a handy IDE...not
the best in the world but getting there.
